The ingredients to make the Moroccan eggplant salad - Zaalouk

– An eggplant

– 3 tomatoes

– A drizzle of olive oil

– 1 tbsp. parsley

– A clove of garlic

– 1 tbsp. teaspoon paprika

– 1 tbsp. cumin

– ½ tsp. teaspoon of turmeric

– Salt and Pepper

The instructions to make the Moroccan eggplant salad - Zaalouk

1. Wash and cut the eggplant into cubes, then place them in a saucepan filled with boiling salted water, cook for about 20 minutes, remove from heat and drain.

2. Wash, peel and seed the tomatoes, dice them, add olive oil, parsley, crushed garlic, paprika, cumin, turmeric, salt and pepper and cook, stirring constantly.

3. When the tomato sauce is reduced, add the cooked eggplant and simmer for 15 minutes, mashing everything with a fork.

4. Zaalouk can be eaten hot or cold!
